“I plan on sending the first rabbit meat to market here by Christmas,” says Birgit Kositzke, rabbit farmer in west H\u00fana\u00feing. She says rabbit mean is quite tasty. “Some say it tastes like turkey, but I can’t say I agree. It’s a white meat, but the taste is unique,” explains Birgit.<\/em><\/p>\n

Around the time of the rabbit slaughter she plans on publishing a booklet with recipes. “Rabbit in mustard sauce is an unbelievably good dish. I think it’s a Chinese dish; rabbit with banana and raisin in a cream sauce is an absolute delicacy,” says Birgit. She is from the eastern part of Germany and raised rabbits at home in her youth. “We generally roasted rabbit in the oven, and so there was often rabbit soup. You can do a lot with the meat and make many great dishes.”
